BUCKWHEAT PENNE WITH SALMON

INGREDIENTS

(2 servings)

  • 90 g Grecian Living tagliatellini
  • 100 g smoked salmon
  • 5 g dill, finely chopped
  • 5 g chives, finely chopped
  • 17 g scallion, finely chopped
  • 15 g raki
  • 10 g oil
  • salt, pepper

PROCESS

  1. Boil the pasta in salted water for 9-10 minutes.
  2. Drain and rinse the pasta, add some oil and stir.
  3. Cut the salmon in small pieces by hand.
  4. Heat a non stick pan over high.
  5. When hot, add the salmon and cook for 5 minutes until golden.
  6. Add the scallion and chives and stir for 2-3 minutes.
  7. Add raki and cook until alcohol is evaporated.
  8. Add the pasta and 50 ml water and cook for 2 minutes until water is absorbed.
  9. Remove the pot from the heat, add the dill and stir.
  10. Taste and adjust the seasonings and serve in a deep dish.
