CAKE WITH CEREAL AND BLUEBERRIES

INGREDIENTS

(10 servings)

  • 300 g milk
  • 30 ml olive oil
  • 1 egg
  • 70 g brown sugar
  • 130 g Grecian Living corn flakes
  • 210 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • blueberries
  • confectioner’s sugar

PROCESS

  1. Whisk the milk, olive oil, sugar and egg until the sugar is dissolved.
  2. Add the cereal and mix well with a spoon.
  3. In a separate bowl combine flour, baking powder, ginger and cinnamon.
  4. Add the dry mixture to the liquid mixture and mix well.
  5. Place into non-stick individual cake molds.
  6. Preheat oven to 180° C at fan-forced setting.
  7. Bake for 50 minutes.
  8. When ready, let it cool them for 10 minutes.
  9. Take the cakes off the molds and allow it to cool completely.
  10. Sprinkle with confectioner’s sugar and serve.
