Pulse the breadsticks in the blender and place in a mixing bowl.
Melt the butter, let it cool to room temperature, add to the mixing bowl and mix.
Line a pan with parchment paper, and press the mixture firmly using the back of a spoon, in order to get an even crust. Place it in the fridge to cool.
Place the cream cheese, lemon zest and lemon juice, confectioner’s sugar and vanilla flavoring in the bowl of a stand mixer and mix until smooth.
Add the heavy cream and continue mixing until it becomes fluffy and firm.
Take the crust out of the fridge.
Break the crust in pieces using your hands and place the pieces into glasses.
Pour the cream mixture over the crust. Place the glasses in the fridge for at least one hour.
