INGREDIENTS

(for 1 serving)

  • 3 slices of Grecian Living’s bread with no added sugar
  • 30g red cabbage
  • 2 carrots
  • lemon juice
  • 3 eggs
  • 2 tbsp coconut oil
  • 2 tbsp olive oil
  • salt
  • pepper
  • thyme

PROCESS

  1. Put the eggs in a bowl.
  2. Add salt, pepper and mix them all together.
  3. In a hot pan, place 2 tbsp of coconut oil and then add the eggs’ mixture.
  4. Once the omelet is ready, remove the pan from the heat.
  5. In a saucepan filled with boiling water, place the carrots.
  6. Once softened, remove them from the water and cut them into pieces using a bowl.
  7. Add lemon juice, salt, pepper, thyme, 2 tbsp of olive oil and 20ml of water.
  8. For a creamy texture use a rod blender.
  9. Try the mixture and add lemon juice, salt and pepper accordingly.
  10. Remove the crust from the bread slices and toast them in the toaster.
  11. To set up the plate, place a slice of bread. Then add a tablespoon of carrot cream, red cabbage and some omelet.
  12. Repeat this twice and use the third slice of bread at the end.
